The electro 3 manual says "....Each
and every piano and sample in the Nord Electro 3 can be replaced by you." and "All of the 128 factory Programs of Nord Electro 3 can be replaced."

So does this mean I can have a variety of sounds from the sample library loaded at once? Can I get rid of the electric piano and harpsichord and have a pad and glockenspiel in addition to the stock mellotron?

in fact, you can delete all sounds from the electro (not the organs, these are no samples). The fewer piano's you have, the more other sounds you can store. The only limit is memory.

About thee programs: these are just stored combinations of a <sound> + <effects> , that are easily accessible in two banks (A and B) with 64 slots. So here you could store, e.g., your <wurlitzer> with <panning> in slot B52.
