I've been trying to use piezo disks in guitars, but I've been coming up against a problem: I can't get the solder to stick on the center of the disk. As soon as the solder cools and I pick up the disk, the wire soldered in the center falls off. The other wire, soldered to the edge is fine, but it's getting annoying. I'm using a 50 watt soldering iron, with generic lead-free solder.

Sounds like you needs some flux! 50W is a bit excessive, but should work ok. If you have some flux-core solder, it usually helps even more. But in general, lead-free solder is a PAIN to rework manually, since it doesn't flow very well (and hence, as you see, doesn't stick too well either). It was mainly developed for mass production.
