Hey, if you were to make only a VCO and connect it into an output, would it work as a sound generating machine? (Would a LFO be the same, too?)

Yes for the VCO, and the LFO so long as it can go up to 20Hz or more.

Building two would be more interesting.

Also a typical vco signal level might be a bit hot for your average audio input so take care.

Would it be an interesting sound, or would it be a hard to hear hum? And could you control it with a potentiometer?

Oh, I just noticed the Subject was misspelled, lol.

Also, Could this be a good VCO (below image)? And what are the input voltage lines going to, the battery? And what does that leave the +5 to +15V lines going to?

Wavedude, if you are considering to start building such stuff you really should choose a design that is well documented and also pretty easy.

Try the WSG first.

That 555 is a very primitive noisemaker. If you want to do it to prove you can make a common, damn near unkillable chip work, and make some loud buzzy square waves, go for it. It will not make music. My first synthesizer module back when I was about 13 or so was a 555, of course it was 1973 and I didn't know much then. I know more now.

The 555 is a cool chip. Makes a good clock, if you pick the parts right, but not a good VCLFO which is why you don't see many people using it in VC applications. And it's a great timer, but not a good VC timer. So if you want to spend a happy and successful evening on a breadboard exploring the 555, go for it. Don't think it's going to make a lot of music.
