Am I missing something? I don't see any midi cables connected, or is he using midi via the Arduino's usb port. If so, it would be cool to tap directly into midi from the usb port.

No there is no midi cable.
But you can choose between midi via USB or MIDI via DIN cable
When you're using USB you need this Software http://projectgus.github.com/hairless-midiserial/ to convert the serial signal to MIDI.
There is a good tutorial here http://www.e-licktronic.com/en/content/16-tutorial-dilicktal-usb

Thanks for the links; I will check them out. It would be great to have midi from the arduino be available to the computer with a virtual cable.

E-licktronic create a new library to communicate with Dilicktal Board
Very easy to use and faster than ShiftIn and ShiftOut Arduino's function
