So I have roughly 1v/Octave VCO based from Nicolas's circuit. I would like to convert the saw wave to a square wave so I can have both waveforms. Is there a simple circuit? I imagine a 555 could do the job by tracking the frequency and matching it with a pulse output?

a comparator would do the job for you

basically (basically because my understanding is basic), it takes an input voltage, measures that against a reference voltage, and when the input voltage is above the reference voltage, the output is 1 and when it is below the reference voltage, the output is 0. using this method, you can also get some nice PWM from the output, by adding a potentiometer to control the reference voltage.

Quite a few VCO designs use a comparator to derive a pulse/square from a TRI or SAW wave - you may find a building block ready to go in online schems for these.
