a lot of lunetta circuitry, I'm thinking mostly of oscillators (40106,4093,4046,4049,4069,4011.....-based) works quite well with touch points using the skin as a resistor.

could electrostatic damaging a problem? If so, with which chips should I be especially careful and what can be done to protect them?

As mentioned in most datasheets, most cd4xxx ICs have a diode-resistor protection network already inside. Is that enough for a instrument played by somebody wearing a synthetic pullover?
also, does it make a difference if a device is battery powered or mains earth grounded?

mhm ... cant answer this...
i think i rarely killed some of my cmos with elektrostatic energy... (i think i killed more with heat or with the dremel ....) and i realy often use the CV in of a 4046 as body contact.
