I have two sn voices ready to be wired up. Is ribbon cable ok or do I need twisted sets of wires for each pot/jack?

You don't need to do the twist.
If you are using connectors of some kind that makes it make sense to use ribbon cable it will be fine.
I just used stranded wire, a lot of it Smile

Wire size requirements are a function of current running through them at a given voltage. You will likely be dealing with milliamps at low voltage DC. Ribbon cable should be ok.
