Isn't there something super simple out there involving a CD4093, and a couple coils to produce CV (which then can be conditioned to gate/trig signals) ?

You mean like a theremin? When you get your hand closer to the antenna, the CV would rise?

I think a singlechip pitch-only theremin could be right for driving the antenna, and you can check this out:

With a bandpass filter and a rectifier, you can get a relationship between the theremin's frequency and a DC voltage.. But it would be pretty hard to shape it to 1V/oct... And I'm not sure square-output theremins have a good response through a BP filter...

Basically seeking something like the Doepfer's antenna controller version. I want to make about 4-6 so I'd rather not spend a hundred bux per when I could make it for quarter of the price and some free time.

I haven`t built this, but have always wanted to, Marjan`s d-beam clone

you would have to add an extra opamp set up as a comparator to get a gate output.
Guess you could rip the IR parts out of an old VCR or TV and remote?
