I don't really understand why there's need for MIDI interface in wind controllers? My idea is to control the soundcard's stereo output via (freely available) Morley circuit, using only one LDR and a light source.

Same thing as with a keyboard, to turn the notes on and off ... a wind controller is a sax like instrument, not just the breath control.

Yes that's right, but it only applies to wind controller instruments, which plays a software Synth or soundfont without a keyboard.
Yet, when one plays the Kbd one doesn't really need a MIDI interfaced wind controller, because one can alter the character of the sound via key velocity (if various layer are provided) and volume/ tremolo variations via my suggested Morley circuit breath controller.

The instrument Ricko is talking about is for sax players not keyboard players.
