So I am about to get at the messy business of doing my own drum programming... I have always had a partner who did this for me

I am thinking of getting an MPC to add to my system - which will see me program some drums in Protools or Ableton 7

Mainly making House and Deep House and a lot of the guys I respect use this as part of their process...

I understand that you can't beat the swing of the drums...

also need any guidance on tutorials or books on drum patterns and theory for dance music

I know Hal Leonard prints a book about drum machine patterns. It uses grid-style tablature. Maybe that is better suited for x0x style sequencing, though I think it would work fine. I haven't actually seen the book, nor do I know if it is at all up-to-date, or totally generic.
