I am circuit-bending small kids toys and would like to replace the speaker with a 1/4" line out to plug into my recording equipment. Is it as simple as cutting the wires to the speaker and replacing them with the audio jack?

Welcome dude! To answer your question harshly, I'll say, "Why haven't you just opened your third eye to the universe and downloaded the info directly from the ether yet? You fool!"

To answer your question in a welcoming manor I would say, "Yes, it is that easy........sometimes. Sometimes the voltage is not that nifty and you might have to throw a specific "voltage divider" inline. Didn't you see this schematic: http://www.circuitbenders.co.uk/tips2.html IS a voltage divider?

This http://fluxplayshop.blogspot.com/2008/07/voltage-dividers.html uses higher value resistors, but as the ratio between them (10:1) is the same as in the circuitbenders schematic it outputs the same voltage, but has less current available (no problem, you don't need that).

The circuit expects an 8 ohm speaker, so the 10K-1K already reduces current a lot, the fluxplayshop scheme would be 10-fold easier still on battery drainage.

Both will work. Using a potmeter has the advantage of on board volume control , and to have the extra juice available when you WANT to drive the sound into distortion.
