Is it possible to setup the Nord Modular so that repeatedly striking the same key triggers the same voice over and over - in polyphonic mode?

That's like making each KEY monophonic.

(I asked the same question regarding NM1 a few years ago, it was impossible on that machine but what about G2?)

Unfortunately, it does not appear that there is any way to do it (or at least there is no simple way and none of the gurus have figured out a solution - yet). Many other synths have options for different voice allocation schemes, but the G2 does not. It always assigns a new voice and robs the older sustaining voices (except the lowest pitched currently active voice).

Yes, in my opinion this can be a significant shortcoming in the G2. Depending on the patch and the musical phrases you are trying to play, this shortcoming can be just slightly annoying or it can really make it impossible to achieve the desired result.

For example, a patch with a fairly long decay, where you are trying to play a part that involves quickly re-playing the same note many times, like a hammered dulcimer playing style or maybe a mandolin. When you play the same note many times in rapid succession, it quickly eats up the available polyphony and starts stealing notes from any sustaining chords. It also just doesn't sound right, because re-playing the same note with these types of polyphonic patches should retrigger that same voice, it should not layer additional voices on top of the sustaining note.

but maybe someone will figure out a work-around.....
