General ChucK language question

Are all of the functions or methods of any particular class (or ugen) documented in the users guides and programmer's API reference?

Or is there a command that shows the available options for using a particular ugen?

I have gotten the impression that there are commands in addition to the ones I have found documented.

Documentation is incomplete and hard to find in places. I'd say feel free to post specific questions here - there's a fair chance that someone will be able to answer or at least share your woes.

It would be nice to have some way of programatically finding out what fields (methods and variables) exist on an instance in a running ChucK program.

Indeed. Most things are in the reference but there are some omissions.

If something is too new to be in the reference then the VERSIONS file in the chuck folder will likely have a brief summary.

In case of trouble just ask.
