how to fix stomp boxes into 19" racks

You'll probably find that the inputs and outputs etc are soldered straight on to the PCB, so fix that close to the back of the rack and poke them through in a similar way. Then you'll need to run extended wires to the controls which will be mounted along the front.
The first one looks pretty simple. The second one will need a 2U rack at least, and fixing all those controls to the front will be tricky. But they may be on a separate PCB. That would be lucky.
