I nearly fell off my chair when I read about this. Symphonix Evolution is a professional 16 track sequencer and score editor for the iPad. Similar in operation to Sibelius, it also has a piano roll editor, and can print off professional looking scores with ease. At £8.99, it's a bargain!

Not only does Symphonix Evolution accept MIDI note in data, it can also output it too, so you don't have to rely solely on its built-in synthesiser. But having a built in synth enables you to work away from the studio.
